A repository can be deleted in the Copia web app under the Settings. In the Settings, scroll to the Danger Zone and select Delete This Repository. Only Owners have access to the Danger Zone.
If you would like to remove a local repository from your desktop app, then you can select Repository > Remove. Be sure to select Also move this repository to Recycle Bin in order to remove the folder and its contents from the file path. Removing the repository locally will not delete the repository from the web app.
